These mango ginger and passionfruit popsicles are truly a tropical ice cold treat. They are perfect to have in your freezer on a hot summers day. These popsicles are fresh, healthy and super tasty. The only thing you’ll need is blender, some popsicle molds and your fresh ingredients.
MANGO GINGER PASSIONFRUIT POPSICLES
The sweet mango and tangy passionfruit combines really well together with the pungent ginger.
I prefer to use really ripe fresh mangos for this recipe. But in case they are not in season, you could also use canned mango puree. Alternatively, when using underripe mangos, you can also add some fresh orange juice to make the puree thinner. Having some silicone molds at home is really handy to create the most delicious individual ice creams. The popsicles easily come out of the mold and you can reuse them over and over again.
MAKING THESE TASTY MANGO GINGER PASSIONFRUIT POPSICLES
Right, let start making these popsicles! Remove the skin and slice all the mango flesh from the pit. Puree the mango in a blender or food processor to a very smooth puree with a splash of orange juice. Add the ginger juice and the honey or agave syrup and blend shortly to mix. In case the mangos are underripe, you can add an extra splash of fresh orange juice to make the puree thinner.
Cut the passion fruit in half. Fill the molds alternately with the mango puree and the fresh passion fruit pulp (half a passion fruit per popsicle) until full. Add the top over the molds. In case you’re using molds that need a wooden popsicle stick, add them too. Freeze the popsicles for at least 6 hours. To serve, hold the molds under some warm water from the tap, the popsicles should come out easily now. Enjoy!

- 500 grams ripe mango (about 2 mango’s)
- orange juice (about 50 ml)
- 3 passion fruits
- 2 tablespoons agave syrup or honey
- 70 ml of ginger syrup (optional)
