This is the best banana bread recipe ever! It’s super easy to make, very moist and full of sweet banana flavour and crunchy pecan nuts. To make banana bread it’s best to use overripe bananas. So if you still have some old, blackened bananas laying in your fruit bowl, this is an ideal recipe to use them, instead of throwing them away. Honestly, the riper the bananas the better 😉
MOIST BANANA BREAD WITH PECAN NUTS
You can vary with this recipe and add all your favorite flavours, like nuts and seeds. The sweetness in this recipe comes partly from the bananas, so the amount of added sugar is less than a regular cake. This banana cake is perfect as a snack with some coffee or tea, you can have it for breakfast or whenever you feel like a healthy treat.
HOW TO MAKE THIS BANANA BREAD
Heat the oven to 175 Degrees Celcius and line a cake tin with parchment paper. This way you can easily take out the cake from the mold once it’s done. First mix the dry ingredients in a bowl, the flour, baking powder, salt and cinnamon. Chop most of the pecan nuts and keep a few whole nuts seperate to place on top of the cake. In a seperate bowl whisk the eggs with the soft butter and sugar until fluffy, add the vanilla extract and milk and whisk to combine. Mash the 3 bananas with a fork and add them to the wet ingredients. Gently fold in the dry ingredients to the wet and mix to combine. Optionally, peel and slice one extra banana lenghtwise and place on top of the cake together with the whole pecan nuts. Place the cake in the oven and bake for 35-45 minutes. You can check with a skewer if the cake is done, by inserting it in the cake. When it comes out clean, it’s done. Take the cake out of the mold using the parchment paper and let it cool shortly before slicing and digging in. Enjoy!

- 140 gr sugar
- 2 eggs
- 50 gr unsalted butter (at roomtemperature)
- 200 gr flour

- 40 gr pecan nuts
